Matjes herring with brown butter
Smashed new potatoes topped with brown butter, pickled matjes herring and crisp accompaniments. Adapted from ICA.

Ingredients
- 900 g new potatoes
- 1 red onion
- 2–3 small snack cucumbers (or 1/2 cucumber)
- 2 jars matjes herring (Abba Klassisk or similar)
- 50 g butter
- 2 dl sour cream
- 1/2 pot dill
- Freshly ground black pepper
Directions
- Boil the potatoes.
- Peel and finely chop the onion. Cut the cucumbers into 2 cm cubes.
- Drain the herring and cut into pieces.
- Brown the butter in a saucepan until it smells nutty and stops sizzling. Pour straight into a small bowl.
- Drain the potatoes and tip onto a platter. Press the potatoes so they crack lightly, ideally with the base of a thick glass. Pour the brown butter over the potatoes and top with the herring and all the accompaniments. Garnish with dill and season with black pepper.
