Brown butter and artichoke pasta

A quick pasta tossed with nutty brown butter, crisp sage, marinated artichokes and lemon. Adapted from ICA.

Ingredients

  • 25 g butter
  • 1 dl sage leaves
  • 1 jar marinated artichokes in oil (à 290 g)
  • 350 g tagliatelle
  • 2 tsp finely grated lemon zest
  • 1 dl finely grated parmesan
  • 150 g cold-smoked salmon, cut into strips

Directions

  1. Brown the butter, take off the heat and add the sage. Drain the artichokes and cut into smaller pieces.
  2. Cook the pasta according to the package and drain. Toss the pasta with the brown butter, artichokes, lemon zest and parmesan, then gently fold in the cold-smoked salmon.
